Agriculture of The chayote. A vegetable and perennial plant of the Cucurbitaceae family, chayotte produces a fruit that is eaten as a vegetable. The term “chayote” allows both to designate the plant in question and the fruit, a kind of large bay about ten centimeters long. Its shape is similar to that of a quirky pear with irregular ribs. The chayote is creamy or pale green in color and contains only one large seed with a thin tegument and very difficult to remove from the fruit. The plant produces leaves 10 to 20 centimeters long with 5 pointed lobes.
The chayotte is called “darling” in Reunion, “Choko” in New Zealand, “Mirliton” in Haiti and “Sosoty” in Madagascar. It is native to Mexico and its cultivation is widespread in the tropics.

The chayotte is a plant that is grown by planting, in the ground especially in the regions of the South. It is very early in the late winter in a place that is sheltered from the sun. It is also possible to do this potted plantation. You have to choose from rather wide and fill it with a mixture of garden soil and potting soil, up to ten centimeters from the edge. The fruit should be laid flat. The total filling of the pot must follow. The pot must stay inside the house, near a window. But when the plant appears, it will have to be taken out and put foot in the ground. It must be certain that all risks of frost are removed.

The chayote can be used exactly as it is done with zucchini . It can be served in salads, especially with young fruits. These can remain raw, grated or go through a light baking. With chayotte, you can make soups, creams, compotes, jams and many other sweet preparations.
We also eat the chayote’s roots after having cut them into sticks to make french fries. Moreover, in countries like Colombia, the roots of the plant are used as tubers and are very often substituted for potatoes. They are sometimes processed into feed for animals, pigs and cattle.
